I’ve been tweaking a cracker recipe for quite some time and I think I finally found the perfect one for our family!
2 Cups whole wheat flour (freshly ground)
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon paprika
1/2 cup butter
1/2 cup milk
1/2 teaspoon vanilla
Preheat the oven to 375 degrees
Combine the flour, sugar, salt and paprika in the food processor. Cut the cold butter in until evenly distributed.
Transfer the mixture to a bowl. Combine the milk, egg and vanilla in a small bowl. Add to the dry mixture. Mix until smooth.
Divide dough into 4 pieces and keep the other pieces covered while you work one at a time.
I like to the roll the dough out right on my baking stone but you can also roll it out onto parchment paper or a silcone mat. You want to roll it as thin and as evenly as possible about 1/16 of an inch.
Cut the rolled out dough into squares. I use my pizza cutter. Sprinkle lightly with salt.
Bake for 10-15 minutes. Watch them closely as the crackers can go from lightly browned to toast very quickly!
Repeat with remaining pieces of dough. (Make sure the stone is cool if you are rolling the dough out right on it or you will have a sticky mess!)
