Banana Pecan Pancakes with Buttermilk Syrup

We have pancakes nearly every Friday and we love to mix it up. This recipe is very versatile. I added bananas and chopped pecans this week but you could add blueberries, chocolate chips, strawberries, bacon crumbles or anything you like to make it your own. When I was a little girl my dad would make pancakes on Sunday morning and would add different ingredients and we had to guess what it was. I remember once he added red licorice! We were all surprised!

Pancakes

Makes 24 pancakes

3 cups flour (I like fresh ground soft wheat)

1 tablespoon baking powder

1/2 teaspoon salt

3 tablespoons sugar

3 eggs

3 cups milk (I prefer soured raw milk)

1/2 cup butter, melted

1 cup smashed banana (or berries or whatever add-in you like)

1/4 cup chopped nuts

  1. Whisk the dry ingredients together in a large bowl.
  2. Whisk the wet ingredients together
  3. Combine the wet ingredients with the dry ingredients and let soak for at least 5 minutes if you are using whole grain flour
  4. Heat the griddle or skillet.
  5. Melt a little butter on the griddle and pour 1/3 cup of batter per pancake. Then sprinkle your special ingredients on each pancake. (With these pancakes I mixed the banana into all of the batter and then sprinkled the nuts on each pancake)
  6. When the pancake gets dry around the edges and the bubbles begin to pop, flip the pancake and finish cooking on the second side.
  7. Serve warm with butter and syrup.

 Buttermilk Syrup

1 1/2 cups sugar

3/4 cup buttermilk

1/2 cup butter

2 tablespoons corn syrup

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons vanilla

  1. In a large saucepan, combine the first 6 ingredients.
  2. Bring to a boil and boil for 7 minutes.
  3. Remove from heat.
  4. Stir in the vanilla.
  5. Stores well in the refrigerator.

Yield: 2 cups

*NOTES: This really bubbles up so make sure you use a big enough pan also it gets very hot! Make sure to use caution around small children so they don’t get burned wanting to taste the yummy syrup until it cools a bit.

Breakfast Cookies!

Do you need a breakfast recipe that is quick, portable and adaptable to what you have in the pantry? Then this recipe is perfect for you! It doesn’t even require any special equipment. Any of my kids over the age of 8 can even make it!

I like to mix it up with a variety of add-ins. The version in the picture has one quarter cup each of chocolate chips, coconut, slivered almonds and dried cherries. You can use whatever you like!

Breakfast Cookies

Makes 36 cookies

 

3 Cups Oatmeal

2 Cups whole grain flour

1 Cup Brown Sugar

4 eggs

1 cup butter, melted

1 cup mix-ins (chocolate chips, raisins, dried cherries, coconut, nuts – I add a variety)

 

Preheat oven to 350 degrees.
Mix all the ingredients together in a large bowl. Form in 1 inch balls.
Bake for 12 minutes.
Cool on the pan for 1 minute. Then enjoy!

Going Back to the Basics

I have found that whenever I get off track in my life I can get back where I need to be by getting back to the basics. Our daily bread recipe is the one I turn to when I want to get back to baking. I have made it so many times that it is sure to work. Everyone loves eating it and it gives us a good nutritional base for many meals. I love making our bread with Prairie Gold Wheat berries from Wheat Montana these days. The flavor of the wheat is delicious and the loaves turn out light and fluffy. Perfect for slicing to fill in the gaps for dinner, making a sandwich, or after a couple days French Toast!

30 Days of Baking

Ah! November is here! I just love fall! The beautiful colors of the changing leaves and the cooler temperatures that make starting a fire in the woodstove so cozy. And after a hot summer there is nothing I like better than to get back to baking! Large loaves of whole wheat sandwich bread, sweet loaves of banana, zucchini or cranberry bread, muffins, biscuits, cookies, and pies.

For my birthday (last May) I got a new cookbook: King Arthur Flour’s Whole Grain Baking. It has over 400 delicious recipes! I have decided to challenge myself to make every recipe in this book. I have no idea how long it will take me but I decided to give myself a running start this month by committing to write about baking every day this month.

I also decided to bring sourdough back into my kitchen and began my starter last night. I will be writing about my success and failures with sourdough. I believe this will be my fourth attempt at sourdough. I am determined to keep up with it this time! I mean it!

Please join me this month as we fill our kitchen with yummy aromas and treat our family and friends to delicious expressions of our love from the oven!

Wheat Crackers

I’ve been tweaking a cracker recipe for quite some time and I think I finally found the perfect one for our family!

Ingredients:

2 Cups whole wheat flour (freshly ground)
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon paprika
1/2 cup butter
1/2 cup milk
1 egg
1/2 teaspoon vanilla

Preheat the oven to 375 degrees

Combine the flour, sugar, salt and paprika in the food processor. Cut the cold butter in until evenly distributed.

Transfer the mixture to a bowl. Combine the milk, egg and vanilla in a small bowl. Add to the dry mixture. Mix until smooth.

Divide dough into 4 pieces and keep the other pieces covered while you work one at a time.

I like to the roll the dough out right on my baking stone but you can also roll it out onto parchment paper or a silcone mat. You want to roll it as thin and as evenly as possible about 1/16 of an inch.

Cut the rolled out dough into squares. I use my pizza cutter. Sprinkle lightly with salt.

Bake for 10-15 minutes. Watch them closely as the crackers can go from lightly browned to toast very quickly!

Repeat with remaining pieces of dough. (Make sure the stone is cool if you are rolling the dough out right on it or you will have a sticky mess!)

Makes about 4 dozen crackers.

Meatballs

Ingredients

6 lbs ground beef (or a mixture I like to use 1 part beef, 1 part pork & 1 part venison)
2 cups bread crumbs
1 cup finely diced onions
1 tablespoon salt
1 tablespoon garlic powder
2 cups tomato sauce
6 eggs

Mix the ingredients together. Using a small scoop make meatballs and place them on a cookie sheet. (It is really important not to handle the meatballs very much as it makes the fat melt on your hands & thus dries out the meat.) Bake for 15 minutes at 400 degrees until cooked through. Remove to another clean pan and after cooling place in the freezer to flash freeze. (This takes an hour or so but it can wait on you.) After they are individually frozen put meatballs into bag.

These work great by themselves, served with BBQ Sauce, Sweet & Sour Sauce, in Stroganoff or with Spaghetti.

Makes approximately 120 meatballs
