We had a wonderful week in Arizona albeit crazy trying to see so many people and get so much accomplished in one week.

Expecting 6potato

Just wanted to post a quick note to let you all know that we are expecting blessing #6 to arrive in September. We heard the heartbeat a couple weeks ago and everything seems to be going well.

Hope you are well and maybe I’ll have time to write more often on here. I have posted a few recipes and thoughts on www.investmentcooking.com.

Carrot Cake Pancakes


A couple weeks ago we went to IHOP for breakfast and I had the most wonderful carrot cake pancakes. They were so good I decided to make our own. Here’s the recipe I came up with.

2 cups whole wheat floor
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 teaspoon pumpkin pie spice
1/2 cup oatmeal

1/2 cup shredded coconut
1/2 cup finely chopped pecans
1 cup finely shredded carrots

2 eggs
2 cups milk
4 tablespoons coconut oil (could use melted butter)

“Syrup”

4 oz softened cream cheese
1/4 cup powdered sugar
1 teaspoon vanilla
dash cinnamon
water (to desired consistency)

In a large bowl, combine all the dry ingredients. In a small bowl, beat the eggs, milk and coconut oil. Stir the wet ingredients into the dry ingredients just until moistened. Fold in carrots, coconut & pecans. Let sit for at least 5 minutes.

Pour batter by 1/4 cupfuls on a greased hot griddle. Turn pancakes when bubbles form on top, cook until second side is golden brown.

For “Syrup”

Blend cream cheese, powdered sugar, vanilla, and cinnamon. Add water to achieve desired consistency.

We all enjoyed them immensely!

1000 Gifts — Beginning Again



Ann has encouraged me to pick up writing about my 1000 gifts once again. I made it to 120 last time so I’ll pick up from there. A couple weeks ago I started a gratitude journal with the girls that we make entries in a couple times a week during Circle Time. I really want to work on being more grateful and I hope this will be a good tool to help me keep my focus.

121. A cute and cuddly baby who’s smile can melt my heart.

122. The smell of fresh baked bread coming out of the oven.

123. Another nice day as we try to make until May without air conditioning (last Monday it was 97 here so we had to leave the house to survive it. 8) )

124. Waking up to birds singing outside our window.

125. A 3 year old who loves helping her mama bake bread and a nearly 5 year old who is always looking for ways to be helpful.

126. A 7 year old who loves entertaining the baby and making her laugh.

127. A 9 year old who was able to be a blessing to members of our church with preparing items for the Family Bible Adventure weekend coming up and watching over their children so they could work.

128. A husband who is feeling much better today.

129. A day off after a crazy weekend of birthday parties and sickness.

130. My new laptop that has more space than I can imagine using for all of our pictures, ebooks, websites and more.
